Bulgaria's 2023 rose oil exports left the country at an average of 9,168 euros a kilogram (Tridge, 2024). That material is rose otto: the steam-distilled essential oil of Rosa damascena. Rose absolute comes from the same flower, made another way, and costs a fraction. In fine perfumery the word rose points to one of two species — Rosa damascena, the damask rose, or Rosa centifolia, the cabbage rose of Grasse — and to one of two extractions. The pair a perfumer picks decides how the finished rose smells, how long it holds, and what the bottle costs.
What is the difference between rose otto and rose absolute?
Rose otto is the steam-distilled essential oil of the rose flower; rose absolute is the solvent-extracted one. Distillation strips out the water-soluble molecules, chiefly phenylethanol, and concentrates the waxy, wine-like fraction. Solvent extraction keeps both, at far higher yield. Otto is the costlier, more structural material; absolute smells closer to a fresh petal.

Rosa damascena vs Rosa centifolia: the two species that matter
Definition. In professional perfumery, rose is the aromatic material derived from the flowers of Rosa damascena Mill. (the damask rose) or Rosa centifolia L. (the cabbage rose, also called Rose de Mai or Provence rose). Every other rose species in fragrance is minor or regional; anything marketed as a rose note is built around these two.
The damask is the older industrial workhorse. Iran, Bulgaria and Turkey are the major producers of oil from Rosa damascena cultivars (Rosa × damascena, Wikipedia, 2024), joined by Morocco's Dades Valley around Kelaa M'Gouna. The centifolia is the Grasse rose: picked in May on a few dozen hectares in the south of France, most under long-term contract to a few luxury houses. Each species expresses a different molecular profile, and that profile is what a perfumer is buying.
Rosa damascena: wine, honey, and the molecule no one can copy
The damask rose is Rosa damascena Mill., the oil-bearing hybrid rose cultivated for distillation in Bulgaria, Turkey, Iran and Morocco, and the species behind almost all rose otto. Ohloff's classic analysis of Bulgarian rose oil puts citronellol near 38 percent, geraniol at 14 and nerol at 7, on a backbone of C14–C16 paraffins that gives the oil its waxy weight (Leffingwell & Associates, after Ohloff). The current standard, ISO 9842:2024, fixes a chromatographic profile for oil grown in Turkey, Morocco and Bulgaria, citronellol running 20 to 47 percent depending on origin (ISO 9842:2024) — a window analysts supplement with minor and chiral markers, because the majors alone are easy to fake (Raeber et al., Plants, 2023).
Two trace compounds do most of the perfume work. β-damascenone makes up about 0.14 percent of Bulgarian rose oil, but its detection threshold is 0.009 parts per billion, and on Ohloff's odour-unit arithmetic it accounts for about 70 percent of what the nose registers. Rose oxide, at 0.46 percent and a threshold of 0.5 ppb, supplies about another 4 percent: the green-metallic lift (Leffingwell & Associates, after Ohloff). The damask reads, on the strip, as the rose of red wine and beeswax. When a bottle is sold as a damask rose perfume, this is the chord it is built around: damascenone halo, rose-oxide lift, citronellol-geraniol spine.
Rosa centifolia: the honeyed, green rose of Grasse
The centifolia produces a different chord: dsm-firmenich, which sells the Geographic Indication Grasse absolute, calls it floral, green, spicy, fruity and honeyed (dsm-firmenich, 2025). What extraction changes, in either species, is the share of 2-phenylethanol — the alcohol that smells of fresh petals and honeyed bread. In one GC-MS profile of a Turkish Rosa damascena absolute, phenylethyl alcohol accounted for 63.4 percent, ahead of citronellol at 13.0 (Çevikbaş et al., Scientific Reports, 2024). A comparative profiling put the same molecule at 46.6 percent of damask absolute against 0.66 percent of the distilled oil (Dobreva et al., Molecules, 2021): phenylethanol is water-soluble, and distillation sends most of it down the drain.
Method, in other words, moves the profile further than species does — and the centifolia data are thinner than the marketing suggests: in that same study a subcritical Rosa centifolia extract carried only 9.0 percent 2-phenylethanol against 59.2 percent for Rosa damascena. The shorthand that centifolia is the phenylethanol rose is a generalisation the literature does not fully support. What holds is the direction: extracted rose is the dewy-petal, honeyed material, distilled rose the wine-and-beeswax one.
What does it mean when a perfume says “Bulgarian rose” versus “Grasse rose”?
Bulgarian rose almost always means damask rose otto, distilled in the Kazanlak valley and treated as the international reference profile. Grasse rose means Rosa centifolia picked in May in the south of France and, in practice, solvent-extracted into an absolute. Origin changes climate, soil and harvest date, and with them the chemistry.
Turkish Isparta is the volume producer: the province accounts for roughly 65 percent of world rose oil output (Daily Sabah, 2016). Iranian rose from Kashan is treated as more delicate and floral. Moroccan damascena around Kelaa M'Gouna, planted by the French in 1938, grows as roughly 4,200 linear kilometres of hedgerow between farm plots (Morocco.com, 2024). The calendar is moving too: Bulgarian pickers now begin close to a month earlier than the historical norm, on warmer, wetter springs (Reuters, 2024).
Grasse is a category of one. Rosa centifolia blooms once a year, in May, and the fields have shrunk for a century: about 12,000 acres in the early 1900s, roughly 124 today (CBS News, 60 Minutes, 2026), squeezed by property development and labour costs (Bois de Jasmin, 2014). Much of what survives is under contract to a single luxury house.
Why rose otto costs more than rose absolute
The yields explain the prices. Damask rose flowers carry 0.030 to 0.045 percent essential oil by fresh weight in field trials (Kumar et al., Scientific Reports, 2023); at commercial scale growers reckon on 3.5 to 5 tonnes of blossom per kilogram of oil (Biolandes, 2024), against a trade rule of thumb near 1:3,000 (Rose oil, Wikipedia, 2024). In the heat-damaged 2022 Bulgarian harvest it took 4,000 kilograms of petals per kilo, 15 percent more than usual, against a 2021 production cost already near 6,000 euros a kilogram (AFP, 2022).
A kilogram of Grasse centifolia absolute, by contrast, takes about 600 kilograms of flowers (dsm-firmenich, 2025) — roughly a fifth to a sixth of the raw material behind a kilogram of otto, because solvent extraction captures far more aromatic mass per petal than steam. That ratio, not mystique, is why absolute sits below otto on a price list.
For a clean-fragrance house the trade-off is also one of solvent. Absolute is conventionally extracted with hexane; producers wash the residue down to trace levels, but trace is not zero, and a natural-only standard treats it as a category to interrogate.
The CO₂ rose, and why it matters to natural formulators
Supercritical CO₂ extraction is the third option. Petals are exposed to carbon dioxide held above its critical point, where it behaves as a solvent without being one in the ordinary chemical sense; when pressure drops the CO₂ evaporates and leaves no residue (AromaWeb, 2024). For rose it is interesting because it preserves the phenylethanol distillation loses, while avoiding the hexane question.
The output is closer to a fresh rose held under the nose than either otto or absolute. The drawback is volume: the equipment is expensive enough that few producers run it.
How to read “rose” on a perfume's INCI list
The label gives you more than the marketing copy. Rosa damascena flower oil means steam-distilled rose otto. Rosa damascena flower extract or flower absolute indicates a solvent-extracted absolute. Rosa centifolia flower extract is, almost without exception, the Grasse-style absolute. Rosa damascena flower water is the by-product of distillation — the hydrosol, not the oil.
If a fragrance lists only parfum or fragrance with no botanical INCI, the rose is most likely a synthetic accord. That is not, by itself, a problem — geraniol, citronellol and phenylethyl alcohol are nature-identical and routinely made in the lab. But the label is then telling you very little.
The synthetic rose, and the natural formulator's job
Most mass-market rose perfumes are built largely on reconstituted molecules: synthetic phenylethyl alcohol, citronellol, geraniol, often a rose oxide for lift. These are the same molecules a flower makes, and the regulatory file on each is well documented. What a reconstitution loses is the trace fraction: the β-damascenone halo that carries most of the natural oil's perceived smell, and the minor terpenes and esters that shift by harvest.
A naturally formulated rose does that work without isolated molecules: two or three rose materials — an otto for structure, an absolute or CO₂ for headspace, sometimes a hydrosol for lightness — balanced against the rest of the composition, and paid for.
The rose at Aimée de Mars
Aimée de Mars builds its rose accords from naturally extracted materials rather than isolated aroma chemicals. The maison's Aromaparfumerie® method, developed by founder Valérie Demars, treats rose as the material on which everything else is calibrated, the same logic of slow extraction that governs the lavender from Mévouillon. Aimée de Mars formulates without phthalates, synthetic musks, or ethanol of undocumented origin.
